Diet-Friendly: Asparagus Beef Rolls

Asparagus is known for its high fiber content and despite its low calorie content, it is rich in nutrients, making it an excellent food for weight loss.

[2 Serving, Ready in 30 Minutes, Easy to Make]

Ingredients:

  • Asparagus, 12 spears
  • Beef, 12 pieces  (our Thin Sliced Beef Ribeye Roll works well)
  • Salt, to taste
  • Ground black pepper, to taste
  • Butter, as needed
  • Balsamic vinegar, 1/2 cup (For Honey Balsamic Glaze)
  • Honey, 1 tablespoon (For Honey Balsamic Glaze)
  • Red wine, 2 tablespoons (For Honey Balsamic Glaze)

Instructions:

  1. Season the thinly sliced beef with salt and ground black pepper.
  2. Prepare the asparagus by peeling the tough outer layer and cutting off the hard bottom part, about a hand's width.
  3. Wrap the seasoned beef around the asparagus spears.
  4. Heat a pan and lightly coat it with butter.
  5. Place the asparagus beef rolls in the pan with the seam side down.
  6. Cook on medium heat. Once the bottom part of the beef turns brown (about 2/3 of the way up), flip to cook the other side.
  7. While the beef is cooking, prepare the Honey Balsamic Glaze. Boil the balsamic vinegar, honey, and red wine for 5 to 10 minutes until the sauce reaches a light, flowing consistency. Be careful not to overcook, as the sauce can become too thick.
  8. Once the beef rolls are cooked, drizzle them with the Honey Balsamic Glaze and serve.
