Ingredients:
- Eggplant
- Beef Sirloin (Our unmarinated Beef Short Ribs work as well)
- Sprouts
- Salt
- Pepper
- Olive Oil
Sauce:
- Soy Sauce
- Olive Oil
- Lemon Juice
- Minced Garlic
- Minced Green Chili Pepper
Instructions
- Mix 2 parts soy sauce, 1 part olive oil, 1 part lemon juice, 0.5 part minced garlic, and 0.5 part minced green chili pepper to create the sauce.
- Slice the eggplant thin
- Trim the fat off the sirloin and slice it thin and slightly larger than the eggplant slices.
- In a pan with oil, sear the beef on high heat until golden brown, locking in the juices.
- Season the beef lightly with salt and pepper, and sear each side once on high heat.
- Plate in this order: eggplant, beef, sprouts, and sauce.
