This dish brings together the crispy, savory delight of a pork cutlet with the spicy tang of kimchi in a stew form. It's a simple, comforting dish that can easily be whipped up in under 20 minutes.
Ingredients:
- Pork cutlet, 1 piece (our Panko-Coated Pork Cutlets work well)
- Kimchi, 1 cup
- Kimchi juice, 1/2 cup
- Red pepper powder, 1 tablespoon
- Minced garlic, 1/2 tablespoon
- Soup soy sauce, 1.5 to 2 tablespoons
- Sugar, 1 to 1.5 tablespoons
- Cooking sake, 1 tablespoon
- Eggs, 1 or 2
- Water, 1/2 cup
Instructions:
- Fry a pork cutlet and cut it into bite-sized pieces.
- In a pot, sauté green onions and onions with a bit of oil.
- Add kimchi and stir-fry, then pour in about 1/2 cup of kimchi juice.
- When the kimchi is slightly cooked, add 1 tablespoon of red pepper powder, 1/2 tablespoon minced garlic, 2 tablespoons of soup soy sauce, 1.5 tablespoons of sugar, and 1/2 cup of water. Bring to a boil.
- Adjust the amount of soup soy sauce and sugar to your taste. Use 1.5 tablespoons of soy sauce and 1 tablespoon of sugar for a less salty and sweet flavor.
- Once the broth thickens, place the cutlet on top.
- Beat 1 to 2 eggs and pour around the edges.
- Garnish with green onions and, optionally, add enoki mushrooms for extra texture.
