Katsu Sando, a Japanese-inspired pork cutlet sandwich, is a delicious harmony of crispy pork cutlet and fresh cabbage. This simple yet flavorful sandwich is an excellent choice for any meal, making it a go-to for a quick, satisfying bite.
Ingredients:
- Pork cutlets, 2 (our Panko-Coated Pork Cutlets work well)
- White Bread (or any sandwich bread), 4 slices
- Cabbage, 3 handfuls
Sauce
- Tonkatsu sauce*, 6 tablespoons
- Mayonnaise, 6 tablespoons
- Ketchup, 2 tablespoons
*For a simple version of Tonkatsu sauce, mix 1/4 cup ketchup + 2.5 Tb Worcestershire sauce + 1 Tb soy sauce
Instructions:
- Deep fry the pork cutlets in a generous amount of oil until golden and crispy. Alternatively, you can lightly oil them and cook in an air fryer.
- Finely chop the cabbage and prepare about 3 handfuls.
- Make a cabbage salad by mixing the chopped cabbage with 4 tablespoons of mayonnaise and 2 tablespoons of ketchup.
- Spread one tablespoon of mayonnaise on one slide of bread and set aside. Spread a good amount of tonkatsu sauce on the other slice of bread.
- Place a good amount of cabbage salad on the side with tonkatsu sauce, then place a cooled pork cutlet on top of the cabbage salad. Add another generous layer of tonkatsu sauce on top of the cutlet.
- Optionally, add salad greens on top of the cutlet before topping off the sandwich with the remaining slice of bread with mayonnaise.
- Optionally, you can trim the crusts off the bread and lightly toast it in a pan for extra warmth and crispiness.
- Wrap the sandwich in parchment paper or cling film and cut in half to serve.

- The combination of the tangy tonkatsu sauce and creamy mayonnaise with the crunch of cabbage makes for a delightful sandwich.
