Soy-Braised Black Beans (콩자반, KongJaban))is a nutritious and delicious Korean side dish that's beneficial for all ages. Black beans, known for their high isoflavone content, are especially good for women and also helpful in preventing hair loss. This recipe is a simple way to enjoy the health benefits of black beans in a savory dish. It's a straightforward recipe that yields a side dish with a perfect blend of salty and sweet flavors. The texture of the beans is both satisfying to chew and pleasing to the palate, making it a popular choice for any meal.

Ingredients:

  • Black Beans, 250g
  • Water for soaking beans, 150ml
  • Soy Sauce, 5 tablespoons
  • Canola Oil, 1 tablespoon
  • Sugar, 2 tablespoons
  • Oligosaccharide (올리고당 - can substitute with simple syrup or similar sweetener), 2 tablespoons
  • Whole Sesame Seeds, a small amount

Instructions:

  1. Wash the black beans three times and soak them in enough water to cover for about an hour.
  2. Place the soaked beans in a pot and add 150ml of the soaking water.
  3. Add 5 tablespoons of soy sauce to the pot.
  4. Include 1 tablespoon of canola oil for added smoothness (optional).
  5. Add 2 tablespoons of sugar and bring the mixture to a boil, then reduce to a simmer once the water has reduced somewhat.
  6. Skim off any foam that forms with a spoon.
  7. When the liquid has reduced to your desired consistency, add 2 tablespoons of oligosaccharide (or syrup) to adjust the sweetness.
  8. Finish by stirring in some whole sesame seeds.
  9. The longest part is soaking the beans, but the cooking process itself is quite easy!
