This Spicy Pork Belly with Shishito Peppers is a delightful combination of succulent pork belly and the peppery goodness of shishito peppers. The dish is versatile, making an excellent side for a hearty meal or a delicious snack to accompany your favorite beverage. The key to this dish is the harmonious blend of savory pork with the heat from the peppers, creating a flavor that's hard to resist.

Ingredients:

  • Pork belly, 300g (our 1/4 Inch Cut Premium Pork Belly works well)
  • Shishito peppers, a handful
  • Cheongyang chili peppers, 5 (can substitute with Bird's Eye Chili/Thai Chili)
  • Green onion, 20 cm

Sauce

  • Sugar, 1 spoon
  • Water, 1/2 cup
  • Minced garlic, 1 spoon
  • Soy sauce, 1/3 cup

Instructions:

  1. Cut the pork belly into bite-size pieces.
  2. Prepare the shishito peppers by cutting them into five equal parts.
  3. Slice the green onions.
  4. Finely chop the Cheongyang chili peppers.
  5. In a pan, stir-fry the pork belly until it turns golden brown.
  6. Once the pork belly is browned, add the green onions and continue stir-frying.
  7. Add sugar and water to the pan.
  8. Stir in minced garlic and soy sauce, then add the shishito peppers and Cheongyang chili peppers. Stir-fry everything together until fully cooked.

Notes:

  • The mix of different types of peppers adds depth to the spiciness of the dish.
  • Adjust the amount of chili peppers based on your spice tolerance.
