Ingredients:
- Kabocha Squash (or similar), 1/4 piece
- Almonds, a handful
- Pine Nuts, a handful
- [Sauce]
- Sugar, 1/2 tablespoon
- Soy Sauce, 2 tablespoons
- Cooking Rice Wine, 2 tablespoons
- Water, 1/2 cup
- Honey, 2 tablespoons
Instructions:
- Clean the squash thoroughly by rubbing coarse salt over the skin, then rinse.
- Although the original recipe uses unpeeled squash, peel it if preferred, especially for young children.
- To make cutting easier, microwave the squash for 3 minutes. This softens it slightly.
- Cut the squash in half, scoop out the seeds, and then cut into cubes.
- Fry the squash cubes in olive oil until they start to brown.
- Add 1/2 tablespoon of sugar, 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, and 1/2 cup of water to the squash, and simmer.
- Add a handful of almonds and pine nuts to the mix.
- Finish by stirring in 2 tablespoons of oligosaccharide or honey.
