This Squash and Nuts Jorim is a delightful and healthy side dish that's perfect for any meal. Made with fresh pumpkin and assorted nuts, this dish is not only tasty but also packed with nutrients. The combination of pumpkin's natural sweetness with the savory flavor of soy sauce and the crunch of nuts creates a unique and satisfying dish. Ingredients:

  • Kabocha Squash (or similar), 1/4 piece
  • Almonds, a handful
  • Pine Nuts, a handful
  • [Sauce]
  • Sugar, 1/2 tablespoon
  • Soy Sauce, 2 tablespoons
  • Cooking Rice Wine, 2 tablespoons
  • Water, 1/2 cup
  • Honey, 2 tablespoons

Instructions:

  1. Clean the squash thoroughly by rubbing coarse salt over the skin, then rinse.
  2. Although the original recipe uses unpeeled squash, peel it if preferred, especially for young children.
  3. To make cutting easier, microwave the squash for 3 minutes. This softens it slightly.
  4. Cut the squash in half, scoop out the seeds, and then cut into cubes.
  5. Fry the squash cubes in olive oil until they start to brown.
  6. Add 1/2 tablespoon of sugar, 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, and 1/2 cup of water to the squash, and simmer.
  7. Add a handful of almonds and pine nuts to the mix.
  8. Finish by stirring in 2 tablespoons of oligosaccharide or honey.
  9. Your Squash and Nuts Jorim is ready to serve!

Notes: This dish is a great way to enjoy the benefits of squash, which is rich in vitamins and fiber. The nuts add a lovely crunch and additional nutrients. You can adjust the sweetness and nut varieties according to your preference.
