Bulgogi Banh Mi Sandwich

Transforming classic bulgogi into a Vietnamese-style Banh Mi.

The Bulgogi Banh Mi Sandwich is an enticing fusion of Korean and Vietnamese flavors. Banh Mi refers to a Vietnamese baguette, and in this recipe, it's filled with flavorful bulgogi, crunchy vegetables, and a spicy sauce. It's a creative twist on the traditional sandwich, perfect for a unique and delicious meal.

Ingredients:

  • Bulgogi beef, 300g (with our Bulgogi, you can skip the marinating, of if you prefer to marinate, our Thin Sliced Beef Ribeye Roll works well)
  • Mini baguettes, 4
  • Onion, 1/2
  • Radish, 100g
  • Carrot, 100g
  • Cucumber, 1
  • Red and green chili peppers, 1 each
  • Cilantro, 4 stalks
  • Cooking oil, 1 tablespoon
  • Mayonnaise, 4 tablespoons
  • Sriracha sauce, 1 tablespoon

Marinade Ingredients (Simplified Bulgogi)

  • Soy sauce, 1 tablespoon
  • Sugar, 1 tablespoon
  • Minced garlic, 1 teaspoon
  • Pepper, to tast

Pickling ingredients for radish and carrot:

  • Vinegar, 2 tablespoons
  • Sugar, 1 tablespoon
  • Fish sauce, 1 tablespoon

Instructions:

  1. Marinate the bulgogi beef with the listed marinade ingredients.
  2. Julienne the onion, radish, and carrot. Thinly slice the cucumber and chop the chili peppers.
  3. Mix the julienned radish and carrot with the pickling ingredients.
  4. Combine mayonnaise and sriracha sauce in a separate bowl.
  5. Sauté the onion in a pan with some oil. Once half-cooked, add the marinated bulgogi and cook for 3-4 minutes until done.
  6. Cut the baguettes halfway and spread sriracha mayo on the insides. Place the pickled radish and carrot on one side, cucumber slices on the other, and then add the cooked bulgogi in the middle.
  7. Garnish with chopped chili peppers and cilantro to finish.

Notes:

  • The combination of tender bulgogi with crisp, tangy vegetables and the spicy sauce brings a delightful contrast in textures and flavors.
