Bulgogi Quesadilla

A unique fusion of Korean bulgogi in a cheesy quesadilla.

Bulgogi Quesadilla is a delightful fusion dish that brings the savory flavors of Korean cuisine into the beloved Mexican quesadilla. With tender marinated beef, melted cheese, and vegetables, it's an innovative dish that's perfect for a special day or any day you crave something different and delicious.

Ingredients:

  • Sliced Beef, 150g (with our Bulgogi, you can skip the marinating, of if you prefer to marinate, our Thin Sliced Beef Ribeye Roll works well)
  • Tortillas, 2
  • Cheddar cheese slices, 2
  • Shredded cheese, 1 cup (Italian cheese mix or pizza cheese mix works well)
  • Onion, 1/2
  • Bell pepper, 1/2
  • Tomato sauce, 2 tablespoons

Marinade Ingredients (Simplified Bulgogi)

  • Soy sauce, 1 tablespoon
  • Sugar, 1 tablespoon
  • Minced garlic, 1 teaspoon
  • Pepper, to taste

Instructions:

  1. If marinating beef, prepare the ingredients: Remove blood from the beef with kitchen towels, cut into bite-sized pieces, and marinate in the bulgogi sauce for about 10 minutes.
  2. Slice onions and bell pepper thin.
  3. In a pan, heat some olive oil and sauté the sliced onion and bell pepper with a bit of salt and pepper.
  4. Cook the marinated beef in the pan until the moisture evaporates.
  5. On half of a tortilla, spread 1 tablespoon of tomato sauce, followed by shredded cheese, the sautéed onion and bell pepper, the cooked bulgogi, more cheese, and a slice of cheddar cheese.
  6. Fold the tortilla in half and cook in a dry pan until the cheese melts and the outside is golden.
  7. Cut the cooked quesadilla into appropriate pieces to serve.

Notes:

  • The combination of bulgogi's rich flavor with melted cheese and the crispiness of the tortilla creates an irresistible dish.
  • This dish is a great way to use leftover bulgogi or as a quick meal solution.
