Instructions

  1. Begin by preparing the bell peppers. Wash them under running water, slightly trim the tops, and cut them to create lids. Hollow out the insides of the peppers using a knife.
  2. Beat two eggs in a bowl.
  3. Finely chop the zucchini, carrot, and green onion, preparing about one tablespoon of each. Feel free to get creative with these ingredients!
  4. Mix the chopped vegetables into the beaten eggs. Add a pinch of salt and stir well.
  5. Spoon the egg mixture into the bell peppers, filling them to about 70-80% to allow space for the egg to expand while cooking.
  6. Place the lids back on the peppers and microwave them for about 5 minutes. The time may vary depending on the microwave, so initially cook for 3 minutes, check, and continue as needed.
  7. Once done, let the bell pepper egg custards cool slightly, then cut into quarters. Serve as a finger food for a delightful eating experience.
