1 Serving / Ready in 10 Minutes / Easy to Make

  • Eggs, 2
  • Red Bell Pepper, 1
  • Yellow Bell Pepper, 1
  • Minced Zucchini, 1 tablespoon
  • Minced Carrot, 1 tablespoon
  • Minced Green Onion, 1 tablespoon
  • Salt, a small amount

  1. Begin by preparing the bell peppers. Wash them under running water, slightly trim the tops, and cut them to create lids. Hollow out the insides of the peppers using a knife.
  2. Beat two eggs in a bowl.
  3. Finely chop the zucchini, carrot, and green onion, preparing about one tablespoon of each. Feel free to get creative with these ingredients!
  4. Mix the chopped vegetables into the beaten eggs. Add a pinch of salt and stir well.
  5. Spoon the egg mixture into the bell peppers, filling them to about 70-80% to allow space for the egg to expand while cooking.
  6. Place the lids back on the peppers and microwave them for about 5 minutes. The time may vary depending on the microwave, so initially cook for 3 minutes, check, and continue as needed.
  7. Once done, let the bell pepper egg custards cool slightly, then cut into quarters. Serve as a finger food for a delightful eating experience.

  • Be cautious with the cooking time in the microwave as it varies with different models. It's advisable to cook in intervals (like 3 minutes, then 2 minutes) and check the peppers in between.
  • The combination of the sweetness and crunchiness of the bell peppers with the softness of the egg custard creates a delightful texture and taste.
